baking bread unplugged

06 Mar

An old discarded commercial range is most ideal since it has safety features built-in, vented and is already insulated. There is not much one needs to do besides supplying a heat source using charcoals or wood. I added granite tiles in place of a baking stone to bake on. Once I figured out the correct amount of coals to heat the oven to 450F, the oven will hold that temperature as long as the coals last, up to 2.5 hours.  Most rustic type breads are baked for 40-45 minutes at 450F
